I was thinking of defeating the latch by sliding something under the beveled striker instead of removing the catch. In concept the trick of using a credit card to unlock a door. So either a custom bent piece of thin metal or heavy string that could pull between the striker and the catch. String is easy to work with if you can get the angles.
I have used a trick to get string into unusual places. Start with very light string and tie a bit of tissue on one end. Use a vacuum cleaner to pull it to the exit you want. On the other end tie heavier string, and continue with heavier string or wire until you get what you want.

Sorry if my input is way off, I am having a hard time drawing a mental picture of the setup even with the excellent pictures you provided.
