I replaced our convection microwave because I wanted a larger oven, a stronger (higher wattage) microwave, and 'newer' functions.
Because our bus was older it had to fit this space:
19" deep (maybe 20")-26" wide (maybe 2 1/4 more?)-18 1/2" height (to fit over Gaggennau double gas burner) so..it took some looking but we found the HMB8050 - 800 Series Built-In Microwave - Stainless Steel. http://www.bosch-home.com/us/products/mi...rce=browse
It is 1.5 cu. ft. with 1,000 Cooking Watts, Convection Cooking, 10 Power Levels, Sensor Cooking, 15" turntable, Touch Control but the best part is it defrosts, bakes with convection air, then microwaves, and then turns into a warming oven....or it can just be used as a warming oven. It works as well or better than my home microwaves\convection ovens\gas ovens. It is large enough to hold a pizza stone and works really well. [eBay direct retailer had it $300 less than market but that was in 2012 so they are even cheaper now.]
I also bought a single convection oven that fits on top of the Gaggenau gas burner if necessary....
FYI, if we replaced the instant hot water with one that can yes, boil water at 212 degrees (water boils at an even lower temp in higher altitudes) but we keep it around 205 degrees....
