you will never be able to use the laminate. i measured the opening and depth etc and then shopped for a counter depth fridge that fit. i ended up with a kitchenaid.
the solenoid lock also did not work with it and i just use a length of velcro to hold the two side by side doors together and it works great.
i had to extend the floor part of the opening to fit the new fridge.
as with any mod or change you will have to adjust for your situation.
we also made a plywood and 2x4 platform to put in front of the fridge (on a rug) so the fridge could slide onto it, then pull the platform with the fridge on it into the opening in front of the door where there was more room. then take it off the platform (4 of us) , take the doors off and take it out the mid door (with very little clearance).
