The Albuquerque KOA has 2 locations, North and East, under the same ownership. Be sure you know which one you're in.
Coffee Creek RV in Santo, TX is a basic park with pretty good access. There's a pretty decent Italian restaurant between it and I-20, Al's Italian Kitchen, that recently opened. It had pretty good food when we were there last month. Gilbert Pecan Company, behind the gas station (which is now a Flying J) is always enjoyable to stop into. Hopefully next year, they'll have a decent crop of native pecans. The natives are very tasty. Maverick Truck stop, on the other side of I-20 is a decent breakfast place, if you like a simple breakfast.
Looks like a good trip.
