Lighting, as any good Hollywood director knows, can radically alter the appearance of thing. Lighting can smooth wrinkles or accentuate them, just ask my bathroom mirror. I look much better in flat light, perhaps in handsome with "good" lighting. What does all this mean? Take a longish, technical term, straight edge to lay on the room to check the waviness. Then you will know the waviness.
That begs the question of how much is too much and why is it too much? Not only is every roof differently wavy than all others, each roof differs in waviness with temperature differences. So, how are we to know if the.waviness observed on a particular coach at a particular time is an indication of a problem or an indication of an absence of a problem? Since I care little about the appearance of a seldom seen surface, the issue boils down to me as: are there any indications that the waviness is causing problems such as leaks or sqaks (a indicator of potential loose parts)? An absence of such problems would say to me that it is likely my roof is wavy and that is its natural state.
